Abstract
⺠Microbial proteases are highly efficient in hydrolysing corn protein. ⺠Protein hydrolysates with smaller molecular weight exerts stronger antioxidant activities. ⺠Corn protein hydrolysates inhibit meat lipid oxidation during the 15-day storage.
