Abstract
► We examined variation in the beer metabolome associated with storage temperatures. ► Metabolite profiles of cold-stored beer was most similar to the fresh beer profile. ► Metabolite variation and a sensory panel show cold temperature storage inhibited beer oxidation. ► Non-volatile metabolites can be utilised as markers of beer oxidation during storage.
