Abstract
⺠We analysed Alicante Monastrell wines, which were investigated for the first time. ⺠In none of the samples analysed toxic levels of biogenic amines were found. ⺠Wine aged period has a stronger influence on biogenic amines content. ⺠Growing area variable can influence on the free amino acid profile.
