Abstract
► We analysed Alicante Monastrell wines, which were investigated for the first time. ► In none of the samples analysed toxic levels of biogenic amines were found. ► Wine aged period has a stronger influence on biogenic amines content. ► Growing area variable can influence on the free amino acid profile.
