Abstract
⺠First report on β-cyclodextrin (β-CD) as a green extraction technique for isolating bioactive phenolics from grape pomace. ⺠Among α, β and γ forms of cyclodextrins, β-CD was the most effective in recovering stilbenes, flavonols, and flavan-3-ols. ⺠The optimum conditions were established for recovering phenolics from dry powder as well as slurry of grape pomace. ⺠The phenolics yield of aqueous β-CD extraction was similar to that of solvent extraction of the slurry of grape pomace. ⺠Incorporation of β-CD to grape mash prior to pressing for juice enhanced the recovery of bioactive phenolics in juice.
