Abstract
⺠The role of salmon collagen properties was studied in relation to muscle texture. ⺠Collagen solubility on acid and acid + pepsin fraction is not related to salmon muscle texture. ⺠More native collagen structure results in better salmon muscle texture. ⺠Low and poor salmon muscle texture correspond to a more disordered collagen molecule.
