Abstract
► The role of salmon collagen properties was studied in relation to muscle texture. ► Collagen solubility on acid and acid + pepsin fraction is not related to salmon muscle texture. ► More native collagen structure results in better salmon muscle texture. ► Low and poor salmon muscle texture correspond to a more disordered collagen molecule.
