Abstract
⺠Microencapsulated carotenoids, α-tocopherol and trolox scavenge ROS and RNS. ⺠Wall material, reactive species and antioxidant influenced the scavenging capacities. ⺠Gum arabic empty microcapsule was a more potent antioxidant than the maltodextrin one.
