Compositions and yield of lipids extracted from hepatopancreas of Pacific white shrimp (Litopenaeus vannamei) as affected by prior autolysis

► Hepatopancreas (HP) of Pacific white shrimp contained lipids and carotenoid. ► Autolysis could increase the extraction yield of lipids and carotenoid from HP. ► Lipids from HP were the excellent source of PUFAs and carotenoid. ► Prior autolysis of HP at 60 °C for 60 min had no negative effect on lipid quality.
