Abstract
⺠Hepatopancreas (HP) of Pacific white shrimp contained lipids and carotenoid. ⺠Autolysis could increase the extraction yield of lipids and carotenoid from HP. ⺠Lipids from HP were the excellent source of PUFAs and carotenoid. ⺠Prior autolysis of HP at 60 °C for 60 min had no negative effect on lipid quality.
