Abstract
⺠Prolonged release in the GI tract promotes better intestinal absorption. ⺠Denatured β-lactoglobulin (βlg) is resistant to pepsin hydrolysis. ⺠Chitosan (CS) prolongs residence time due to formation of a viscous gel layer. ⺠Complexation between βlg and CS forms a double-wall structure. ⺠CS/βlg shell encapsulates bioactives for prolonged release in the GI tract.
