Abstract
► Lipid profiles of fish oil extracted from trout heads, spines and viscera. ► Amount of polyunsaturated fatty acids in the range 72.6-75.3% in all the oils. ► EPA in the range 6.4-8.7%; DHA in the range 6.0-7.3%. ► Presence of omega-1 lipids: 3%. ► Oil from heads and spines: TAG = 98%. Oil from viscera: TAG:DAG:FFA = 87:8:5.
