Abstract
⺠Fractionation and identification of main proteins in processing tuna by-products. ⺠Proteomic techniques are valid to identify proteins despite genome of tuna is not sequenced. ⺠Tuna by-products could be suitable sources of bioactive peptides according to identified proteins.
