Abstract
⺠We give a sample of identifying metal chelating peptides using IMAC-Zn2+ and LC-MS/MS. ⺠Six zinc-chelating peptides were identified from sesame hydrolysates. ⺠The zinc chelating ability of Asn-Cys-Ser is higher than reduced glutathione. ⺠The sesame hydrolysates by trypsin could be potential metal chelating agents.
