Abstract
⺠Arsenolipids are lipid-soluble arsenic compounds present in oils and fats of marine organisms. ⺠The current knowledge of their occurrence, chemical structures and biological relevance is addressed. ⺠The relevance of arsenolipids in food and feed is discussed with respect to food and feed safety. ⺠Analytical techniques employed in studies of arsenolipids are reviewed.
