Abstract
⺠Tofu was fermented with Lentinus edodes and Pleurotus ostreatus mycelia. ⺠Fermented tofu contained higher percentages of aglycone forms. ⺠The inhibition activities of ACE and α-glucosidase were improved in fermented tofu. ⺠Anti-cancer and anti-inflammation activities were also improved in fermented tofu.
