Abstract
► Tofu was fermented with Lentinus edodes and Pleurotus ostreatus mycelia. ► Fermented tofu contained higher percentages of aglycone forms. ► The inhibition activities of ACE and α-glucosidase were improved in fermented tofu. ► Anti-cancer and anti-inflammation activities were also improved in fermented tofu.
