Abstract
⺠Six vitamins exhibited inhibition in models against heterocylic amines formation. ⺠Pyridoxamine (PM) was able to reduce the levels of three HAs by 40% in beef patties. ⺠PM reacts with phenylacetaldehyde to form adduct with MS, NMR characterisation.
