Abstract
⺠A total of 297 peptides was identified from casein pancreatic hydrolysates during 24 h digestion. ⺠Many potential bioactive peptides exist in the hydrolysates. ⺠Pancreatic hydrolysis with the rates at the order: β-CN > αs1-CN > αs2-CN > κ-CN. ⺠Reaction behaviors of individual caseins upon pancreatic hydrolysis were compared.
