► Fermentation of 12 fibres by pig and human inocula were compared. ► Fibre fermentation kinetics is influenced by its sugar and linkage composition. ► Faecal inocula from pig and from human fermented various fibres differently. ► Monitoring of fibre degradation during fermentation may show how the fibre is utilised.
