Abstract
► Trypsin I from sardine (Sardinops sagax caerula) is a cold adapted protease. ► The cDNA sequence was obtained and was confirmed by mass spectrometry. ► Changes in the amino acid sequence are consistent with low activation energy. ► Molecular modelling confirmed that the sequence adopts the trypsin fold. ► Cold-adapted sardine protease is suitable for food biotechnological applications.
