Abstract
⺠Trypsin I from sardine (Sardinops sagax caerula) is a cold adapted protease. ⺠The cDNA sequence was obtained and was confirmed by mass spectrometry. ⺠Changes in the amino acid sequence are consistent with low activation energy. ⺠Molecular modelling confirmed that the sequence adopts the trypsin fold. ⺠Cold-adapted sardine protease is suitable for food biotechnological applications.
