Abstract
⺠Albumin and glutelin were major protein fractions in Akebia trifoliata var. australis seed. ⺠The subunits of seed proteins showed molecular weights ranging from 12.0 to 50.0 kDa. ⺠Albumin showed the highest solubility, surface hydrophobicity and emulsifying capacity. ⺠A similar secondary composition was shown in A. trifoliata var. australis seed protein isolate and glutelin.
