Abstract
⺠We isolated the rutin hydrolyzing enzyme (RHE) from Fagopyrum tataricum Moench seeds. ⺠Some properties of RHE were analyzed including molecular weight, pI and Km value. ⺠RHE has a specific catalytic activity toward rutin and hydrolysis product (quercetin) was further determined and confirmed. ⺠These results will provide a theoretical basis for future enzymatic preparation of quercetin.
