Abstract
⺠Influence of filtration on volatiles and sensory profile of virgin olive oils. ⺠Filtration has an unequal impact on volatiles of two monovarietal oils. ⺠Filtration does not influence the oil sensory score. ⺠Filtration causes some slight changes in sensorial profile. ⺠Useful in developing targeted technology for monovarietal oils quality improvement.
