Abstract
⺠Dehydration temperature affects the berry metabolism. ⺠Higher temperature favour the oxidation of ethanol and formation of acetic acid. ⺠ADH rose immediately at 30 °C while rose only at 20% weight loss at 10 °C. ⺠In contrast, ADH gene responded immediately at lower temperature. ⺠A double stress sensitivity perceived at gene level is discussed.
