Abstract
► Dehydration temperature affects the berry metabolism. ► Higher temperature favour the oxidation of ethanol and formation of acetic acid. ► ADH rose immediately at 30 °C while rose only at 20% weight loss at 10 °C. ► In contrast, ADH gene responded immediately at lower temperature. ► A double stress sensitivity perceived at gene level is discussed.
