Abstract
⺠Analysis of indole compounds in thermally processed edible mushrooms. ⺠Processed edible mushrooms are a good source of indole compounds. ⺠All processed species contain l-tryptophan. ⺠The highest number of indole compounds was found in processed chanterelle mushrooms.
