Abstract
► HPLC-ESI-TOF-MS permitted the characterisation of 23 phenolic compounds. ► The phenolic compounds geographical behaviour is studied in 'Chemlali' olive oils. ► Fifteen compounds were useful to establish a canonical discriminant model of the oils. ► A correct classification is achieved with the canonical discriminant analysis.
