Abstract
⺠A LC-MS was used to characterise the natural phospholipid (PL) classes. ⺠A LC-MS was used to characterise the molecular species in flaxseed oils. ⺠The distribution of fatty acids was found to differ between phospholipids. ⺠A LC-MS lead to greater understanding of the specific roles played by polar lipids.
