Abstract
⺠ATPE could remove 90% of sugar and retain most of MAY in the mulberry extract. ⺠Three kinds of mulberry anthocyanins have not been reported in the literature. ⺠MAY by ATPE showed higher antioxidant activity than the ethanolic extract.
