Abstract
► Chickpea protein hydrolysates produced with pepsin and pancreatin contain chelating peptides. ► These chelating peptides can be efficiently purified by affinity chromatography. ► A positive correlation between histidine contents and chelating activity was observed. ► These peptides may be useful in increasing mineral bioavailability.
