Abstract
⺠Chickpea protein hydrolysates produced with pepsin and pancreatin contain chelating peptides. ⺠These chelating peptides can be efficiently purified by affinity chromatography. ⺠A positive correlation between histidine contents and chelating activity was observed. ⺠These peptides may be useful in increasing mineral bioavailability.
