Abstract
► Finger millet seed coat is a rich source of dietary fibre and calcium. ► Seed coat was isolated from native, malted and hydrothermally treated millet. ► Composite flours were prepared with 10% and 20% seed coat level. ► The biscuits from the composite flours exhibited superior nutritional qualities.
