Abstract
⺠Zn species degradation in the human gastrointestinal tract was investigated. ⺠A sequential analytical approach was applied. ⺠Water extracts of pumpkin seeds exhibited a specific Zn species fingerprint. ⺠Zn species identified in plant extracts were completely decomposed to Zn2+. ⺠Antinutrients like phytate might be responsible for reduction of Zn bioavailability.
