Abstract
► Zn species degradation in the human gastrointestinal tract was investigated. ► A sequential analytical approach was applied. ► Water extracts of pumpkin seeds exhibited a specific Zn species fingerprint. ► Zn species identified in plant extracts were completely decomposed to Zn2+. ► Antinutrients like phytate might be responsible for reduction of Zn bioavailability.
