Abstract
⺠Three sesame storage proteins were hydrolysed with pepsin, trypsin and chymotrypsin. ⺠Degree of proteolysis was monitored by SDS-PAGE and densitometry. ⺠2S albumin was very resistant to proteolysis. ⺠7S and 11S globulins were relatively labile to pepsin. ⺠Stable polypeptides were generated by proteolysis of 7S and 11S with duodenal enzymes.
