Abstract
► Three sesame storage proteins were hydrolysed with pepsin, trypsin and chymotrypsin. ► Degree of proteolysis was monitored by SDS-PAGE and densitometry. ► 2S albumin was very resistant to proteolysis. ► 7S and 11S globulins were relatively labile to pepsin. ► Stable polypeptides were generated by proteolysis of 7S and 11S with duodenal enzymes.
