Abstract
⺠Grouper gelatin films had higher Mechanical and barrier properties than redsnapper films. ⺠Incorporation of MMT and chitosan improved the Tensile strength and Young's modulus of the films. ⺠Water solubilities were lower in the films incorporated with chitosan. ⺠The water vapour transmission rates of fish gelatin films were reduced by the addition of MMT. ⺠SEM micrographs showed smoother surface in gelatin-MMT films.
