Abstract
⺠Interactions of phenolic acids with cellulose and pectin were assessed. ⺠Chlorogenic, caffeic, and ferulic acids each bound to both polymers. ⺠Phenolic acid depletion from different juice concentrations was similar. ⺠Phenolic acids and anthocyanins in purple carrot juice bind similarly to cellulose.
