Abstract
► Interactions of phenolic acids with cellulose and pectin were assessed. ► Chlorogenic, caffeic, and ferulic acids each bound to both polymers. ► Phenolic acid depletion from different juice concentrations was similar. ► Phenolic acids and anthocyanins in purple carrot juice bind similarly to cellulose.
