Abstract
⺠Apple peel is a rich source of flavonoids which provide numerous health benefits. ⺠Apple peel flavonoids (FAE) inhibited ACE, an enzyme associated with hypertension. ⺠Enzyme kinetic studies revealed that flavonoids are competitive inhibitors of ACE. ⺠Human metabolite, quercetin-3-O-glucuronic acid had the greatest ACE inhibition.
