Abstract
► An acidic peroxidase isoform was purified and characterised from papaya latex. ► The purified peroxidase isoform possesses a wide substrate specificity and is stable over a wide range of temperatures. ► The isolated peroxidase in the immobilised form can be applied to determine micromolar H2O2 in milk.
