Abstract
⺠Destabilization of UHT milk by Pseudomonas fluorescens is strain dependent. ⺠All casein molecules were hydrolysed by heat stable enzyme(s) from P. fluorescens. ⺠Enzymatical hydrolysis of casein induces casein micelle destabilization.
