Abstract
► Destabilization of UHT milk by Pseudomonas fluorescens is strain dependent. ► All casein molecules were hydrolysed by heat stable enzyme(s) from P. fluorescens. ► Enzymatical hydrolysis of casein induces casein micelle destabilization.
