Abstract
⺠A total of 59 VOCs were identified from Tuber melanosporum fermentation system. ⺠VOCs from Tuber fermentation system were influenced by sucrose concentration. ⺠The similarity of VOCs between fermentation system and fruiting-body was confirmed.
