Abstract
► We investigated antioxidant capacity and anthocyanin profile of eleven Turkish sour cherry juice. ► Sour cherry juice was a strong antioxidant material. ► Six distinct anthocyanins were determined in the sour cherry juice. ► Cya-3-glurut was the major anthocyanins, followed by cya-3-rut and cya-3-soph. ► The correlation between antioxidant capacity - cya-3-rut was significant.
