Abstract
► Secondary metabolites of Prunus mahaleb L. fruits were characterised by HPLC/DAD/MS. ► First characterization of an Italian liqueur produced from P. mahaleb was performed. ► o-Coumaric acid, quercetin, cyanidin glycosides and coumarin were identified. ► Most of the identified metabolites have not been previously detected in P. mahaleb. ► Solid residues from liqueur production are sources of appreciable amounts of anthocyanins (3.3 mg/g).
