► Characterization of saponins in black bean seed coats, hilum and cotyledons. ► Quantification of saponins in seed tissues of raw and germinated black beans. ► Sprouts had a higher concentration of saponins compared to cotyledons or seed coats. ► Soyasaponin Af was the most abundant saponin in all black bean tissues. ► Flavonols were mainly concentrated in seed coats.
