Abstract

âº Characterization of saponins in black bean seed coats, hilum and cotyledons. âº Quantification of saponins in seed tissues of raw and germinated black beans. âº Sprouts had a higher concentration of saponins compared to cotyledons or seed coats. âº Soyasaponin Af was the most abundant saponin in all black bean tissues. âº Flavonols were mainly concentrated in seed coats.
