Abstract
												⺠Characterization of saponins in black bean seed coats, hilum and cotyledons. ⺠Quantification of saponins in seed tissues of raw and germinated black beans. ⺠Sprouts had a higher concentration of saponins compared to cotyledons or seed coats. ⺠Soyasaponin Af was the most abundant saponin in all black bean tissues. ⺠Flavonols were mainly concentrated in seed coats.
