Abstract
► Rice dreg protein is a low cost protein source with >50% protein content. ► Enzymatic hydrolysis is a practical route to improve protein content and solubility. ► Enzyme type influences functional properties and antioxidant activity of RDPH. ► RDPHs prepared by alkaline protease showed higher protein recovery and content. ► Optimum use of alkaline and Neutrase enzymes could produce functional RDPH.
