Abstract
⺠Rice dreg protein is a low cost protein source with >50% protein content. ⺠Enzymatic hydrolysis is a practical route to improve protein content and solubility. ⺠Enzyme type influences functional properties and antioxidant activity of RDPH. ⺠RDPHs prepared by alkaline protease showed higher protein recovery and content. ⺠Optimum use of alkaline and Neutrase enzymes could produce functional RDPH.
