Abstract
⺠High oleic-high stearic sunflower oil hard stearins were evaluated for CBEs formulations. ⺠Isosolid diagrams of palm mid fraction/sunflower stearins blends were obtained. ⺠Eutectic and softening effect were found for some mixtures. ⺠Selected CBEs were formulated according to isosolid diagrams and solid fat content at 25 °C. ⺠Isosolid diagrams of cocoa butter/CBEs showed full compatibility between these fats.
