Abstract
⺠The risk due to fining agent residues for allergic subjects is considered. ⺠Commercial wines fined with caseinates with or without bentonites were measured. ⺠An ELISA method was developed to detect residues of allergenic proteins. ⺠Immunoblotting technique was used to confirm data obtained with ELISA test. ⺠Results support a dossier sent to EU for labelling exemptions for caseinates.
