Abstract
► The risk due to fining agent residues for allergic subjects is considered. ► Commercial wines fined with caseinates with or without bentonites were measured. ► An ELISA method was developed to detect residues of allergenic proteins. ► Immunoblotting technique was used to confirm data obtained with ELISA test. ► Results support a dossier sent to EU for labelling exemptions for caseinates.
