Abstract
► Tannic acid forms insoluble complexes with major peanut allergens. ► The complexes do not release the allergens at pH 2 and 8. ► Sodium chloride (1 M) does not dissociate the complexes. ► Complexes presumably would not be absorbed in the gut. ► Tannic acid may be useful for removing peanut allergens in foods.
