Abstract
⺠Tannic acid forms insoluble complexes with major peanut allergens. ⺠The complexes do not release the allergens at pH 2 and 8. ⺠Sodium chloride (1 M) does not dissociate the complexes. ⺠Complexes presumably would not be absorbed in the gut. ⺠Tannic acid may be useful for removing peanut allergens in foods.
