Abstract
⺠Barley glutelin hydrolysates by alcalase exhibited strong antioxidant activities. ⺠Large-sized peptides possessed stronger DPPH scavenging effect and reducing power. ⺠Small-sized peptides were more effective in Fe2+-chelating and OH scavenging. ⺠The hydrophobic fraction contributed to Fe2+-chelating and OH scavenging capacity. ⺠Four peptides contributing to antioxidant activities were identified.
