Abstract
► Barley glutelin hydrolysates by alcalase exhibited strong antioxidant activities. ► Large-sized peptides possessed stronger DPPH scavenging effect and reducing power. ► Small-sized peptides were more effective in Fe2+-chelating and OH scavenging. ► The hydrophobic fraction contributed to Fe2+-chelating and OH scavenging capacity. ► Four peptides contributing to antioxidant activities were identified.
