Abstract
⺠A novel SDS zymography protocol for detection of cathepsin activity was established. ⺠Cathepsins activity increased after high pressure (HP) treatment and decreased during storage. ⺠Western blot analysis showed that troponin-T was degraded during storage. ⺠HP processing enhanced the final product quality characteristics.
