Abstract
► A novel SDS zymography protocol for detection of cathepsin activity was established. ► Cathepsins activity increased after high pressure (HP) treatment and decreased during storage. ► Western blot analysis showed that troponin-T was degraded during storage. ► HP processing enhanced the final product quality characteristics.
