Abstract
⺠Oak honeydew honey can be easily recognised by a simple NMR approach. ⺠Quercitol, a deoxyinositol is a taxonomic marker for oak honeydew honey. ⺠It is detected by the signals of its methylene group in NMR spectra of raw honey.
