Abstract
► Coconut oil and fusel alcohols were converted to flavour esters by lipase. ► The biocatalysis process was carried out in a solvent-free system. ► Transesterification was optimised to obtain high yield of esters. ► Enzyme operational stability was improved by solvent-wash treatment.
