Abstract
⺠Coconut oil and fusel alcohols were converted to flavour esters by lipase. ⺠The biocatalysis process was carried out in a solvent-free system. ⺠Transesterification was optimised to obtain high yield of esters. ⺠Enzyme operational stability was improved by solvent-wash treatment.
