Abstract
► Anthocyanin binding with plant cell wall analogues containing cellulose and pectin was assessed by depletion from solution. ► Initially (mins-hours) there was a similar rapid but limited binding of anthocyanins to all cell wall analogues. ► Prolonged (days-weeks) anthocyanin exposure to cell wall analogues increased binding to both cellulose and pectin. ► Individual purple carrot anthocyanin components showed similar binding properties.
