Abstract
⺠The PA fractions' structure and size influence on ACE inhibition was evaluated. ⺠The mDP, %EC and %G of the samples had different influence on ACE inhibition. ⺠ACE inhibition by grape PAs depended on the flavanols stereochemical configuration.
