Abstract
⺠Trypsin from hepatopancreas of freshwater prawn (Macrobrachium rosenbergii) was purified and characterised. ⺠Low molecular weight (17 kDa) trypsin was firstly reported in crustacean and fish. ⺠Purified trypsin hydrolysed prawn and fish collagens effectively.
