Abstract
► Trypsin from hepatopancreas of freshwater prawn (Macrobrachium rosenbergii) was purified and characterised. ► Low molecular weight (17 kDa) trypsin was firstly reported in crustacean and fish. ► Purified trypsin hydrolysed prawn and fish collagens effectively.
