Abstract
⺠The in vitro assay is used to assess the bioaccessibility of Ca, Cu, Fe, Mg, Mn and Zn from honey. ⺠Ca, Cu, Fe, Mg, Mn and Zn are highly (80-100%) accessible from dark colour honeys. ⺠The intake of dark colour honeys in amount of 100 g dayâ1 can contribute up to 65% to the Mn RDA.
